Rice Cookies

A reminder of spring (and a Persian New Year must have!), these rice cookies are both airy and tasty. Found on every Nowruz table, these cookies are are made with Rice Flour, Cardamon, Poppy Seeds, and of course Rose Water. Want to know more? See below for more details




Instructions

To begin, make sure your butter is at room temperature and begin softening with a wooden spoon (you may use a mixer if you'd like). Sieve the icing sugar directly into the butter and once mixed, you may then add the Rose Water and Egg Yolk together. Mix these ingredients until they all create a smooth mixture. Afterwards, you may fold in the Rice Flour, Cardamon, and Cornstarch (the cornstarch helps in aiding the dough as this recipe can be quite sticky/loose).


Once the mixture is completed and the dough is ready, roll the dough into a long (no thicker than 1 inch, this will be your cookie size). Wrap the log well into a plastic wrap or a wrapping of your choosing, and let it rest in the fridge for an hour to hold its shape.


When you are ready to bake, preheat the oven to 325°F. Grease a baking tray and unwrap your cookie dough from the. Slice the cookies into 1-2 centimeter thickness and roll into balls and place on baking tray and sprinkle some poppy seeds on top. Bake for 15- 20 Minute until light beige color.

Cookie:

▢ 2½ cups Rice Flour

â–¢ 1 cup Icing Sugar

▢ ¾ cup Butter (room temp)

â–¢ 1 large Egg Yolk

â–¢ 1 tsp Cornflour (optional)

â–¢ â…› tsp ground Cardamom

â–¢ 1 tbs Rose Water

Garnish:

â–¢ Poppy Seeds

â–¢ Ground Pistachio

â–¢ Rose Petals

Prep Time: around 10 minutes.

Cook Time: 15-20 minutes

*Note bake time may vary depending on size


Plating

Traditionally, these cookies are sprinkled with poppy seeds on the very top, but to give an extra color and taste, you may also add a pinch of rose petals and grounded pistachios once baked. As these cookies are often made during Nowruz, why not plate them on a decorated plate from our Zuhour collection along with some spring flower stems (or if you ask us - we love using ours Aladdin golden trays!)
