Ingredients
For the filling:
2 tbsp olive oil
1 small shallot, finely diced
2 cloves garlic, minced
10 oz (280 g) fresh spinach, chopped
4 oz (115 g) feta cheese, crumbled
2 tbsp ricotta
2 tbsp chopped fresh dill
1 tbsp chopped fresh mint
1 tsp lemon zest
¼ tsp ground nutmeg
Freshly ground black pepper
24 round gyoza wrappers
For cooking:
2 tbsp olive oil
¼ cup water
Whipped feta-tahini dip
6 oz (170 g) feta
¼ cup Greek yogurt
1 tbsp tahini
1 tbsp lemon juice
1 tsp honey
1 tbsp olive oil
Garnish
Toasted sesame seeds
Chopped pistachios
Fresh dill
Microgreens
Pomegranate seeds
Lemon wedges
Instructions
1. Make the filling
Heat olive oil over medium heat.
Sauté shallot until translucent, about 3 minutes.
Add garlic and cook for 30 seconds.
Stir in spinach until wilted.
Remove from heat and cool slightly.
Mix in feta, ricotta, dill, mint, lemon zest, nutmeg, and black pepper.
2. Fill the dumplings
Place 1 tablespoon filling in the center of each wrapper.
Moisten the edge with water.
Fold into a half-moon or circle and seal, pleating the edges if desired.
3. Cook
Heat olive oil in a nonstick skillet.
Arrange dumplings flat-side down.
Cook until bottoms are golden (2–3 minutes).
Add water and immediately cover.
Steam for 4 minutes.
Remove lid and continue cooking until the bottoms become crisp again.
4. Make the dip
Blend feta, Greek yogurt, tahini, lemon juice, honey, and olive oil until smooth and creamy.
5. Plate
Spread the whipped feta dip on a serving platter. Arrange the crispy roll on top or alongside. Garnish with sesame seeds, pistachios, dill, microgreens, and pomegranate seeds. Finish with a squeeze of fresh lemon.
